Yes, you heard that right! These cookie dough balls are as delicious as they are nutritious. I make mine with collagen protein powder — my favorite for cyclists.
4 Scoops Vanilla Protein Powder
1/4 Cup Almond Butter
1/4 Cup Honey
1/4 Cup Agave or Maple Syrup
1/4 Cup Rolled Oats
1 Tbsp Unsweetened Almond Milk
1 Tbsp Dark Chocolate Chips
Pinch of Salt
1. Mix all ingredients well (except for chocolate chips) by hand, mixer, or food processor.
2. Mix in chocolate chips.
3. I like shaping my energy bites into 1-inch balls, but you can make yours smaller or larger. Or if you'd rather, you can press the mixture into a baking dish lined with parchment paper and you make energy bars instead of bites. Whatever sounds good to you!
